Best butcher in town. Great spot for quality, harder-to-find cuts. I typically come here for their lamb cuts, tomahawks and pork belly. They also have a section with beef knuckles and centers which my Irish wolfhound loves. Service is sometimes curt and prices are sometimes higher than expected on some items but don’t be turned off by that. More often than not, the staff is friendly and helpful and the prices are below average if you know what you’re looking for. Only butcher I go to in town anymore.
Their goat meat is excellent for African pepper soup. Friendly and knowledgeable service.

They lost our order, then charged an astronomical amount for a replacement piece of meat. Then my wife bought something else and it was mostly fat and skin for like nice piece at regular store. They do not care about the customer!
Love Prime Cut, the best selection of meats in the Springs. Always order my Christmas prime rib from them and have been very happy with the quality as well as advice for recipes and preparation.

I bought 7 lbs. Of short ribs for 101 bucks, it was poorly cut and so fat after smoking maybe not 2lbs edible. Service was poor as was selection. Ill never spend another Penny at prime cut.
Shopped with a friend who worked at a butcher shop. He knew what he wanted and made sure he got it, so the staff were good servers, but it looked like there was one person who knew what they were doing, and the rest were bumbling. But he also bought a little countertop sausage to-go and it was not nearly dry enough for room storage. Opened it up to be greeted with mold.

This is possibly one of the best kept secrets in Colorado Springs! My girlfriend and I just got 2 center cut filets, they are like butter melting in your mouth! The staff was amazing I am so thankful that we still have places with this super quality proudly running their business!
Worst overpriced ribeye Ive everhad the displeasure of purchasing!! It was tough, stringy and $20 a pound! On top of that they were not wearing a masks while cutting meat, eew gross!! I reminded them it was state law to wear a mask inside.. Two employees just stormed off. What is wrong with people handling food during a pandemic with no mask? I will never return!The steak was cooked rare... And all 3 of you had pre existing medical conditions? Doubt it! Stay away... Meat was properly cooked as I am a chef... Poorly butchered and stringy.

I took my white tail deer in to them and told them I would like steaks, roasts, and cheese sausage. Cost me nearly $400, I had never gotten back so little meat before when taking in a whole deer. The sausage is horrible there is no cheese and the overall taste is bad. I am basically going to throw all of the sausage away. I do not recommend going here to have wild game processed.
Picked up two ribeye and two sirloin steaks today. I grew up on a farm and this is what beef should taste like. Great service and quality selection!

This happened last season, but beware. We took our kill in to be processed and were shorted. It was a clean shot and was taken in same day. We usually take ours to Ted Baker out in Peyton, and have had no issues with them. We just thought wed give these guys a try, because they are closer to our home. We let it go then, but with the meat shortage during the virus, we are really suffering due to it. I do not recommend.

Mens Health ran an article in the June 30, 2017 issue: The Best Way to Cook a Perfect Burger. The article recommends using freshly ground meat, grind it yourself or find a good butcher. I called The Prime Cut and bought 40 freshly ground hamburgers pressed into 5 ounce patties for a large picnic. The hamburgers were charcoal grilled and got rave reviews. Freshly ground hamburger from a butcher shop is a little more expensive than grocery store hamburger but well worth it. The hamburgers from The Prime Cut were the best hamburgers I have ever grilled. Ask for Dennis. Highly recommended. Five stars.
Its unfortunate to say butcher shop. My wife picked up a $200 brisket, and I had intentions to cook the two different muscles differently so we asked if they could separate them and they said yes. Well, all the person did was cut the full packer in half. WOW... WOW... I called, and they werent sympathetic or even attempt to demonstrate any sort of empathy to my call or understand my disappointment and said thats how we do it. Even if this was their practice, and the request was to separate them, the question should be posed back to the customer for validation. They just told me, they cut it in half so you get both pieces in each half. The statement to get both pieces in each half still negates the question of separating the point and the flat. Its highly disappointing when the request is to separate and not cut in half.
Best ribeye of our life. Smoked with hickory 45 mins, 220°. Reverse seared high, high, high heat with some garlic olive oil 2.5 mins each side. Was medium rare and perfect. Didnt need the steak knives, that tender. Well be back. Also picked up a whole chicken, their signature burger patties and some jalapeno poppers.
I usually never leave reviews for any place because they are usually big chain stores. But i try to always do it for the smaller companies. Now i’ve only been here once ( will be returning soon) but i left happy. I picked up just one really good sized sirloin, price was good and quality was great. Also got some good pan frying cooking tips.
Make sure you guys check your meat before you hand over your money. My meat was very smelly and does not sit right with me or my friend who also went with me. I got a half pound of skirt steak to try this place out and see if they were any good. I was very wrong. While the meat looks fine, I cannot stand the smell of the meat. I have bought meat many many times before and it’s never had this particular smell to it. It smells almost as if it’s been partially cooked already. The receipt says no refunds or returns which is a shame because I’ll not be returning. I did not buy aged beef. I bought skirt steak for tacos.
Skip if you value your health. We did not notice one single covid precaution. None of the employees wearing masks, no social distancing, nothing. Small businesses need to stay open but being careless hurts us all. I will never go back again because of their lack of concern for others.
Took in 37 lbs. of boneless Elk meat to get processed summer sausage and snack sticks. 4 hr round trip from my house. Paid $280 total which was suppose to include 9 lbs. of pork. Never weighed it when I picked it up. Big mistake. It didn’t seem like 46 lbs. to me so I weighed it at home. Only got back 37 lbs.So either the pork never was added or somebody scammed about 10lbs.Travis Mann

Ive only purchased prime tenderloin from them but they are always the best quality. Very friendly service and close to where I live so that helps. I get 6oz prime tenderloin and grill at 500°F for 4 minutes per side. Perfect.
Some great looking cuts. The only place Ive found to carry picaña also known as top sirloin cap. One of my favorite cuts of meat. But no one seems to know what it is. The moment I mentioned it they knew exactly what I wanted and even had it in the back as a whole piece. Simply fantastic I will be making this place a regular part of my shopping.

Got a Prime Rib cut for New Years Day dinner. Did a basic Martha Stewart preparation of salt n pepper rub - 20 minutes @ 450º then 325º til 115-120º internal. Let rest 20 minute. Serve.It was SPECTACULAR!
I always buy steaks from the prime cut. Better meat than any grocery store or restaurant for that matter. We rarely go out for steaks these days because the prime cut allows me to cook a better one on the grill at home.
In the past when I took my game to a butcher I always got less meat than I expected and I always got stuck with a bill that was more than what I was quoted --Not So With The Butcher Block! My freezer is topped off and my bill was right on target. Friendly expert service, customer oriented, great Italian Elk Sausage and had my animal processed less than a week. Highly recommended! I certainly will be going back there.

Their Sirloin steak is so tasty and tender and the Honey Bourbon sausages are the best. If you go shop here you will never eat grocery store meat again. They have a great selection of beef pork bison and lamb. The two guys are super friendly and really know their stuff.
I always have a great experience going to the Butcher Block. The quality of meat and seafood they offer is second to none in the area. The staff is friendly, helpful, and I never feel intimidated (when you dont know a cut, just ask, they will tell you their favorite way to cook it up). Be sure to try the duck bacon, it is a family favorite! We rarely ever buy pork bacon anymore because the duck just tastes better and doesnt give us heartburn.

Buyer beware! I bought a porterhouse from this place based on the reviews I read for fathers day. Got home unwrapped the steak prior to cooking and it appeared old brownish and had an unpleasant smell to it. Top dollar for top meat, what a joke! Im not sure I want to eat this 40 dollar steak now as it is turning my stomach every time I smell it! Do yourself a favor go to Safeway save some money and get better meat.

I read the bad reviews, and they seem trivial and elementary. When you ask for the best you will pay for the best, period. Hands down the best beef, fish, chicken, elk, bacon, jerky I have ever had in my life. Definitely worth the price. Disregard the bad reviews, they are incorrect.
Went to see Dennis on our search for pork belly and was pleasantly surprised at the variety of products offered at The Prime Cut. Goat?! Duck Bacon?! Will most certainly be back for more!

Prices are on the high side compared to grocery stores, but you get what you pay for in this case as the cuts I have tried are very good. I like that it is a small mom and pop establishment - family run and friendly each time.

Display cases filled with quite a few turned brown cuts of bacon and steaks. Expect to pay $18.99/lb for a ribeye that is 35% solid fat chunks. Not worth the money for the product you will get. Had a steak 3x the size, 2x the flavor, and half the price (marked down) from King Soopers last week. Second time Ive tried meat from here. Was not impressed either time.

The best bone in Rib-eyes that I have had in a long time. Choice cuts with the perfect marbling. They grilled so good, tasted even better! Also, got some excellent smoked Applewood bacon and butcher bacon is always the best. I never shop at walmart, king soopers, or Costco for my meat. Go get it from the source because they get the best cuts from the farm!

I have boughten meat all over the world and had numerous cuts of meat all over the world, Ive yet to find a place this perfect from all their cuts of meat to the service. Ive tried just about everything and compared to higher end restaurants or other grocery outlets up to whole foods and their meat is not comparable. Im scarred from buying meat at any grocery outlet and will only purchase my meat from these men. They take meat serious and so do I! My favorites are the applewood smoked bacon, ribeyes, and beef ribs. I make them better in my kitchen then any restaurant Ive had in the springs thanks to these guys and their quality of meat. Burgers meatballs brats bacon all variations of steaks and pork chops and loins you cant beat them!

I took my elk in to them and told them steaks, roasts, jerky, summer sausage and then burger!! Cost me $456. I got maybe one of my backstaps in steaks. 2 roasts 3 to 5pnds each. 6 pnds of jerky and 12 pnds of summer sausage. The rest was burger!! They suck and will rip you off!
Dont waste your time going here. Asked for a certain cut.....was told another would be better because they didnt have it in stock.Asked for a portion of one cut for a certain recipe was told thatd be nice if i stocked itWhat a joke. King Soopers will have exactly what you want.....its just not as good according to the website.Lousy.
