If you can afford this shop, you should go for it! AMAZING meat! I have never been disappointed. I once did a comparison between a CC burger vs Nieman ranch and conscious blew the other away. But it’s very pricey. I get to for special occasions only.

First we bought dry aged steaks and they were the best steaks I have ever had (my husband it a grill master) then we bought pork chops so very delicious, like pork used to be instead of tasteless. Last night we had jalapeño cheese brats. We were astounded at how good they were. So far batting 1,000. P.S. the giardiniera egg salad, also not to be missed.

We went there for the first time and they were super nice. Wee got jerky stick thing. It was so good. Im excited that they sell all the rare parts of the meat including beef cheeks. Definitely go back again.

I cannot recommend buying in bulk from Conscious Carnivore. We ordered 1/2 a hog last year and were very disappointed. The cuts were very unusual and mostly full of bones. This was not the quality we expected.

My partner went today to buy a shoulder of lamb. We only needed 2 1/2 pounds for dinner, and when he pulled up to the curbside, he was told the smallest shoulder they had was 5 pounds. He was asked if the weight was okay, twice, and my partner told the staff member yes, because we needed lamb for the recipe regardless.They took my partners credit card information and rang up the lamb inside, since they are only doing curbside pickup, then put the lamb and the receipt in the trunk. It wasnt until my partner took the lamb out of the trunk (because there was some dirt in there and he didnt want it somewhere unclean) that he saw the price tag--the lamb was SIXTY ONE dollars.Obviously the meat is more expensive here because its better quality, but nowhere in the process did anyone tell him the price of one piece of meat was going to be x3 more expensive than the rest of the groceries we bought for this recipe, not when they took his credit card, not when they told him the size of the shoulder, not even when they brought the lamb out. Thats a ridiculous way of doing business. You cant just use covid as an excuse not to tell your customers how much theyre paying for their meat.

I just had a great experience at this place. I came in looking for a bit of an unusual cut of meat. The butcher cut it for me on site fresh, and we ended up having a fairly detailed conversation about how to cure and smoke it. The people that work at this place really know their stuff and are excited about what theyre doing and selling. The prices are higher than the local mass market grocery stores, but not higher than specialty stores or higher end groceries. I would highly recommend this place for anyone that enjoys meat.

Friend ordered point brisket from here. They cut straight down through a full packer brisket and gave it to him. How do you call yourself a butcher and do this to your customers while charging inflated prices?

Last year I purchased a 2 5lb boneless prime rib cuts, and had no problems with our order. We were also given a quote, and the total was very close to what we were quoted...roughly $350. This year I made the same order, my husband just went in to pick it up...bone in and the cost is $500, then he offered my husband a boneless rib eye and said it is the same as boneless prime rib, which it is not. I am not spending $500, and they can not fulfill an order for bones prime rib, and on 12/24 we will not be able to get it elsewhere so we will have to take the boneless rib eye. Last time we purchase here.

We frequently shop here and I cannot say I have ever been disappointed by their selection, freshness, quality, expertise or service. I have been able to find products I have not been able to get in Madison. Even our dog loves it, they have large marrow bones!

Meat quality had been above average. Coordination with butcher, ability to actually get specific cuts and honest real butchering has been tough at times. I suspect they will continue to do fine as they have Shorewood to support their vast stock of sausage sales...

First of all, Im convinced grass fed beef is far healthier than the regular beef supply that we get from the grocery store. Conscious Carnivore does source their products very carefully and humanely. That said, be sure you know what youre ordering.For a holiday we ordered a 5# NY Strip roast. When I un-wrapped the roast it was bound with string. Having cut meat in a past life I thought this was rather odd, so I untied it. There was 2 pounds of bone and fat tied to the bottom of the roast leaving only 3# of the actual roast (sure glad a couple had to cancel). When I asked Conscious Carnivore they said this was the proper way to do a NY Strip roast, per their Chicago meat cutter. Well that was a first. He claimed it added more flavor to the roast. Excuse me, but when something is at the bottom of anything, its going to drip out the bottom, not defy gravity and move up in the roast. So, make sure you know what youre ordering and ask many questions.

Conscious does not mean honest.Firstly, I appreciate the idea and goal behind this store’s concept to provide local quality meat to the Madison community. I feel that is a great concept and goal. However, due to my recent experience as a first time customer and meat buyer well experienced in the culture, I am left disappointed and will choose to shop elsewhere based upon my values and needs.They have a variety of meats. They have some great meats. But as far as providing the highest quality they do not. Their sausages contain MSG. And the Buffalo I purchased for $16.18 cents was confirmed to contain beef in the meat. That is so upsetting to me as a quality game meat consumer. I can buy pure buffalo right across the street WITH NO FILLERS for the same price.Lastly, I asked about ordering specific meats...they said no sorry. When I confronted the meat representative on the phone about my buffalo purchase he was so dissmive customer service-wise I thought I would return the favor.So as far as conscious meat eaters go, be alerted that you might be getting a misleading product and be sure to read the true indegrients here as I do not trust their product or support their dismissive approach to treating my unique needs.

Sam is the best! And, you cant beat the quality of their food...they really focus on the customer.

Everything we have purchased so far has been beyond amazing. Such a great little gem for Madison. I try to stop by once a week for marrow bones as well for they have become my dogs favorite treats!!

Well, went here once and wont ever again... First of all, Sam could get a tune up on his customer service skills and his meats knowledge. When asking for boneless, I dont mean bone-in. He couldnt get me off the phone fast enough either. THEYRE IN THE COOLERS ALREADY, just come in and see what we have, just come in. Stopped in and no one said a word to me when I was looking through all the coolers and the only person at the register finished helping the customer and high-tailed it to the back... Finally found what I wanted and it was bone-in... NOT boneless like I asked. Very expensive meats in there, would expect to get some better customer service too... Really sad to receive that kinda service.

I have been coming here more and more frequently. The quality of meat and service here is hard to beat in Madison. Even if I was not entirely sure of what cut of meat I was looking for there was always someone there to help me and help customize my order.

Was not impressed at with the way we were treated. Had to wait 5 minutes for the butcher to get done chit chatting with his friend who clearly didnt buy anything. The steaks looked great and I wanted a sirloin, the only problem was that I didnt want a steak the size of a plate. So when I asked if I could have one cut or if he could cut one down he said oh no we dont do that. So I was just about to say well give me that one then he goes over here we have are cheaper cut steaks for the people who cant afford these ones. I wanted to say it has nothing to do with the price just the size was to big for just me. Anyways we will no longer go back after being treated like we were customers who could not afford a good steak.

My first visit was at 3pm on a Tuesday. I received top notch service and great suggestions. The gentleman recommended a Bone-In Ribeye for my girlfriend and I to share. He even offered tips for grilling it on a charcoal grill. I was skeptical on the prices ($20/lb), but went to Hy-Vee after for groceries and their top choice reserve ribeye was selling for $28/lb. and I have to say the meat quality wasnt even close in comparison to CC. The end result was the best steak Ive ever made and tasted. We got a 24oz. steak cut super thick, making it easy to get the perfect medium rare steak temp I prefer. It was incredibly juicy and it melted in your mouth! We will definitely be back for our grilling needs. Keep it up!

We were driving past Madison to pick up a popup for camping and wanted to find a butcher near Arena, WI. I knew I wanted to pick up some pork belly for a breakfast meal so when looking up butchers we found the Concious Carnivore in Madison. I called ahead and had them cut some pork belly for me. When we arrived it was ready. While inside I could not believe how great their meat looked! So I added a huge ribeye steak, more pork butt and sausages! This was some of the best tasting meat ever! Everything is grass fed and you can tell! Great butcher shop!

The meat and eggs are from another world. I didnt know chicken could taste so different.
