Ive enjoyed the process of food preservation for many years, as a dabbler. As Ive become more serious, the idea of canning meat fish and vegetables in actual cans seemed like a smart way to really up my preservation and storage plan. If anyone has made a similar choice, they will agree with me that getting useful, understandable and encouraging information is a huge challenge, even with Google! I was referred to Louis by the owner of a large can distribution company and also by the craftsman who makes the Ives-Way series of can seamers. Both warned me that I would find Louis gruff, talkative extremely well informed and passionate about the science of food preservation! They know Louis! Since meeting Louis, I have purchased my seamer and first batch of cans. More importantly, I have thoroughly enjoyed being the karate kid to Mr Miagi (Louis) as he has walked me through the science, practices and safety of the world of safe pressure canning, and cans. I experienced a minor glitch in our order which Louis personally got fixed immediately. I have and expect to continue to draw everything I ever need to know about professional pressure canning from my growing relationship with Louis and his Embarcadero Home Cannery. This week, Louis is walking us through canning our first batch of chicken!And, yes, I have my notebook!This is a follow up to my original review.Jan 26th 2021Since the review, I have gotten my seamer and some cans Ive set up my seamer and properly adjusted it to seam cans of chicken. With Louis coaching the process and sharing pictures of the process flow, my wife and I processed and canned 11 cans (6lbs) of chicken breast. Louis encouraged us to open and sample the canned meat and we were very pleasantly surprised to find that the chicken tasted and shreds almost identical to albacore tuna packed in water! The smell of the product was neither pleasing nor off-putting but distinct. I give that to the fact that we put no seasoning but the slightest (less than an 1/8th tsp/can) dash of salt in the cans. The chew of the chicken is very nice and as Louis suggests, we now have a baseline of experience to begin our canning in tin journey. Louis is very committed to teaching best and safest practices for the preservation of low-acid foods while keeping the best taste, pleasant texture and highest nutrition of the foods we can. If you are interested in an education in the science and process of safely preserving foods in tin cans, you will find it difficult to get the sort of one to one interest in your new project that comes with a call to Embarcadero Home Cannery!Update July 16th 2021I have become more and more interested in the process and science of canning in cans. In my pursuit of improving my own process I asked Louis about the steam pressure relief valve he uses on his canning retorts. I ordered one and installed it on my mirro canner. Heres what I noticed:The installation is not difficult but does require a willingness to void any factory warranty and assume responsibility for ones own safety. (were talking about creating a closed, stable, high pressure plasma environment that is looking for a way to escape!)Once I installed the pressure relief valve, I tested it on the stove (gas). My canner came up to 15 psig very smoothly and once there was maintained easily by a whisper of flame. I held the pressure for about 10 minutes and it didnt waiver in the slightest.The difference between a proper steam pressure relief valve and a wobble weight is not fair. I found that my canner was very difficult to maintain at pressure with the provided wobble weights. Canning with them demanded constant diligence to avoid losing pressure and lots of irritation listening for the ts, ts, ts of the wobble weight. The accuracy and control of the steam pressure relief valve limits the concerns to proper flame (or electricity) management.Canning demands attention to detail and safety and a proper steam safety relief valve improves both.
Louis, the owner of this company, is extremely knowledgeable and of stout character and humor. He showed me everything I needed to know about my can sealer and the various attachments. Ill be returning for more business and to service the machine I acquired. Would highly recommend coming here for the personal touch over acquiring shoddily made Chinese goods that one finds easily online.
Very helpful and assisted me in transitioning from pressure canning jars to using cans. I bought a used can sealer and they were able to repair and dial it in for use with their NESS cans. The cans are awesome because they save space by nesting in each other like dixie cups. Easier to ship and to store. This is important to me for canning salmon in Alaska. They are experts and I am looking forward to learning more from them.
